- 1/2 cup yellow onion (minced)
- 3 Tbsp. extra-virgin olive oil
- freshly ground black pepper (as needed throughout recipe)
- 3 cups vegetable stock (for polenta)
- 1 cup quick-cooking polenta (such as Savoie or Bob’s Red Mill brand, adjust stock to package instructions)
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese (for polenta)
- 2 Tbsp. parsley (chopped, for polenta)
- 2 Tbsp. vegetable stock (to deglaze pan)
- 3 Tbsp. butter
- 2 stems fresh thyme
- 1 stem fresh rosemary
- 1 shallot
- 2 garlic cloves
- 1/3 cup tomato purée
- 1/4 cup sherry
- 2 cups vegetable stock (for mushroom ragout)
- 1 Tbsp. parsley (chopped, for sauce)
- 1/2 lemon (zest only)
- 1 Tbsp. parsley (chopped, for garnish)
- grated Parmesan cheese (for garnish)

You’ll need more olive oil while making the polenta. Yummy recipie though.

tasted great! easy to follow. I wonder if a little lemon juice in addition to the zest might add a sharpness that contrasts with the sweetness of the tomato, but all and all, i was very happy.

I agree with Anthony! Mushrooms are the star of the show, and the polenta was okay. Next time I’ll spend more time and ingredients to spice it up.
