- 4 green chilis
- 1 tsp. shrimp paste
- 2 Tbsp. lemongrass (minced, fresh or prepared)
- 3 shallots (approx 5tbsp finely diced)
- 1 tsp. coriander
- 1 tsp. cumin
- 1 lime
- 1 Tbsp. galangal (minced or finely chopped, /ginger)
- 1 handful cilantro (/coriander leaves and stalks)
- 2 medium carrots
- 2 medium zucchini (small-, /courgette)
- 10 oz. asparagus
- 2 Tbsp. vegetable oil
- 1 packet stir fry noodles (2 pouches, 14oz/400g, suggest Thai rice noodle but can use other)
- 1 1/2 cups coconut milk
- 2/3 cup water (or light stock)
- 1 lb. deveined shrimp (peeled and, /prawns - raw or cooked both fine)
