- 1 tsp. fresh ginger (grated)
- 3 Tbsp. green curry paste (I used vegan-friendly brand Thai Kitchen)
- 1 tsp. turmeric
- 3 1/2 cups water
- 1 Tbsp. tomato paste
- 1 tsp. salt
- 2 Tbsp. olive oil
- 2 garlic cloves (minced)
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1 tsp. Garam Masala
- 3/4 cup coconut milk (I used BPA-free Natural Value)
- 2 cups fresh spinach (stems removed and roughly chopped)
- chopped fresh cilantro (or parsley for garnish, optional)
