- 1 red bell pepper (diced, I used 1 red and 1 orange)
- 1 green bell pepper
- 1 cup chopped celery
- 1 red onion (small, diced)
- 2 cloves garlic (minced or grated)
- 2 cups frozen okra
- 28 oz. fire roasted tomatoes (petite diced)
- 1 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 1 tsp. dried thyme
- 1/8 tsp. cayenne pepper
- 1 Tbsp. Cajun seasoning
- 1/2 Tbsp. chili powder
- 1 1/2 tsp. salt
- 1 1/2 tsp. black pepper
- 6 cups low sodium chicken broth
- 1 lb. boneless skinless chicken breast (diced)
- 1/2 lb. shrimp (tails, removed and deveined)
- 4 Tbsp. cornstarch (mixed with a 1/4 cup cold water to create a slurry)
- 1 1/2 cups quinoa (uncooked)
