- 2 onions (large, chopped)
- 3 baking potatoes (large, leave the skin ON and dice into bite sized pieces)
- 6 cloves garlic (finely chopped)
- 2 qt. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. italian seasoning
- 1 1/2 cups heavy cream
- 6 cups kale (I chop ours pretty small because it doesn’t cook down as much as Spinach)
- shredded Parmesan cheese
