- 1 Tbsp. olive oil
- 1 medium onion (finely diced)
- 1 cup carrots (finely diced)
- 1 cup celery (finely diced)
- 1/4 cup red pepper (finely diced)
- 1 Tbsp. fresh garlic (chopped)
- 3 cups low sodium broth (you can use bone broth for extra protein!)
- 1 can creamed corn
- 3 cups cauliflower florets (cut into bite-sized pieces)
- 2 bay leaves
- 1 tsp. smoked paprika
- 1 tsp. salt
- 1/2 tsp. thyme
- 1/2 tsp. onion powder
- 1/4 tsp. black pepper
- 1 dash Tabasco
- 1/8 tsp. cayenne pepper (optional)
- 1 can fat free evaporated milk
- 3 Tbsp. cornstarch
- 1 cup sweet corn (kernals canned or frozen. If frozen, thaw)
- 1 lb. shrimp (raw, I use 31-40ct cut into pieces)

This is easy to make and truly delicious. I make it with clam juice to add to the seafood flavor.
