  • 1 medium onion (finely diced)
  • 1 cup carrots (finely diced)
  • 1 cup celery (finely diced)
  • 1/4 cup red pepper (finely diced)
  • 1 tablespoon fresh garlic (chopped)
  • 3 cups low sodium broth (you can use bone broth for extra protein!)
  • 1 can creamed corn
  • 3 cups cauliflower florets (cut into bite-sized pieces)
  • 2 bay leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 dash Tabasco
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 can fat free evaporated milk
  • 3 tablespoons cornstarch
  • 1 cup sweet corn (kernals canned or frozen. If frozen, thaw)
  • 1 pound shrimp (raw, I use 31-40ct cut into pieces)
