  • 2 teaspoons olive oil
  • 1 onion (large, chopped)
  • 1 red bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 jalapeno pepper (minced fresh)
  • 1 pound ground chicken breast (grass-fed beef can be substituted as well)
  • 1 teaspoon brown sugar (optional)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 15 ounces red kidney beans (dark, drained and rinsed, feel free to add a second can if desired)
  • 29 ounces diced tomatoes (or crushed, I often use one can of each)
  • 1 cup low sodium chicken broth
  • 1 can chipotle chiles in adobo sauce (: 2 chiles, minced, along with 2 Tbsp. of sauce)
  • 2 ounces unsweetened chocolate (chopped)
  • 1 teaspoon red wine vinegar
