- 2 tsp. olive oil
- 1 onion (large, chopped)
- 1 red bell pepper (chopped)
- 3 cloves garlic (minced)
- 1 jalapeno pepper (minced fresh, optional)
- 1 lb. ground chicken breast (grass-fed beef can be substituted as well)
- 1 tsp. brown sugar (optional)
- 2 Tbsp. chili powder
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 1 Tbsp. unsweetened cocoa powder
- 15 oz. red kidney beans (dark, drained and rinsed, feel free to add a second can if desired)
- 29 oz. diced tomatoes (or crushed, I often use one can of each)
- 1 cup low sodium chicken broth
- 1 can chipotle chiles in adobo sauce (: 2 chiles, minced, along with 2 Tbsp. of sauce)
- 2 oz. unsweetened chocolate (chopped)
- 1 tsp. red wine vinegar
