- 1 onion (medium, chopped)

- 2 celery (ribs, chopped, optional)
- 2 cups cremini (finely chopped, or other mushrooms)
- 4 cloves garlic (minced)
- 1 qt. chicken stock (low-sodium)
- 1/2 tsp. marjoram (dried, feel free to substitute dried herbs of your choice: eg. thyme, dill, oregano)
- 1/2 tsp. salt (+/- more to taste)
- 1/2 lb. boneless skinless chicken breast
- 1/3 cup fresh parsley (chopped)
