- 1 white onion (medium, diced)
- 2 carrots (medium, peeled and julienned)
- 2 cloves garlic (minced)
- 1/2 tsp. salt

- 3 Tbsp. unbleached all-purpose flour
- 1 pt. half & half (or substitute milk or 1 cup milk and 1 cup heavy cream)
- 1 1/2 tsp. mustard powder
- 1/8 tsp. cayenne pepper
- 2 cups low sodium vegetable stock
- 1 bay leaf
- 4 cups broccoli florets (chopped, and peeled sliced stems)
- 8 oz. extra sharp cheddar cheese (grated)
- Parmesan cheese (grated for garnish is desired, optional)
- 1 green onion (sliced thin for garnish, optional)

Nice flavor, and creamy texture. I added a little more half & half, and added cooked crumbled bacon just because we like it.
