- 9 grams psyllium husk (powder)
- 1 1/2 tsp. baking powder
- 1/2 tsp. xanthan gum (or 1 tablespoon golden flaxseed meal)
- 1/2 tsp. canela
- 1/4 tsp. kosher salt
- 1/3 cup erythritol
- 2 eggs (at room temperature)
- 1 tsp. vanilla extract
- 1 tsp. apple cider vinegar
- 42 grams grass-fed butter (unsalted, or coconut oil/ghee, melted & cooled)
- 60 grams heavy cream (or sour, or full-fat coconut milk, at room temperature)
- 140 grams blueberries fresh (preferred)
