- 2 lb. boneless, skinless chicken thighs
- 2 Tbsp. olive oil (Bertolli Mild)
- 2 bell pepper (red, orange or yellow; sliced)
- 10 oz. cremini mushrooms ([or white mushrooms] sliced)
- 1 large onion (thinly sliced)
- 2 cloves garlic (chopped)
- 1/4 cup balsamic vinegar
- 24 oz. pasta sauce (1 jar Bertolli® Parmesan & Romano with Cracked Black Pepper)
- 2 Tbsp. chopped fresh basil leaves (finely)

Directions
- unchecked Season chicken with salt and black pepper. Heat oil in 5-quart saucepan on medium-high heat; add chicken. Cook 2-3 min. on each side or until browned. Remove chicken from skillet.
- unchecked Add peppers, mushrooms and onions to same pan. Cook on medium-high heat 6 min. or until vegetables are crisp-tender, stirring occasionally. Stir in garlic; cook 30 seconds. Stir in vinegar, scraping up any brown bits from bottom of pan. Stir in sauce; bring to boil on high heat. Reduce heat to low; return chicken to pan. Cover. Simmer 20 min. or until chicken is done (165°F). Stir in basil.
- Serving suggestion: Serve chicken and sauce over hot cooked rigatoni pasta with garlic bread. Sprinkle with Parmesan cheese.
