Really tasty! Works fine with cheddar cheese too, or maybe even without it to be vegan

This was really delicious. Even my husband the carnivore really enjoyed it! I did double the garlic and added about 4 oz. baby portabella mushrooms. The risotto was creamy and flavorful. Will definitely make again.
