I’ve made this recipe with Kerrygold aged white cheddar many times. It’s a keeper!

This was even better as leftovers when crisped up in the toaster oven. I would recommend using more rice if you want a heartier dinner meal which makes it less eggy. About a cup of rice, and def use instant rice. Crumbled sausage, leftover chicken... really any combo of cooked meat would work here. I added thyme, a whole small diced sweet onion, and extra garlic for flavor. Also topped with thyme, shredded asiago, and panko with a spray of oil.
