- 4 garlic cloves (chopped)
- 1 bunch fresh parsley (organic, chopped)
- 1 tsp. gluten
- smoked paprika
- hot chili pepper
- 1/2 tsp. gluten
- 2 tomatoes (large organic, ripe, diced)
- 3/4 tsp. sea salt (or to taste)
- 2 zucchini (organic, green or yellow, I used one of each)
- 7 oz. rice noodles (dry stir-fry, I used Thai stir-fry noodles, they come in 15 oz. so half the package)
- Parmesan cheese (for topping, optional)
