deliciousness! I added ground beef to the layers and it was mouth watering good! I'll definitely cook up this meal again!

Just made this for dinner. Wow delish, you'd never know it was low carb. Will definitely make this again, used no salt mozzarella in between layers and put whole wheat bread crumbs 1/4 cup sprinkled on the to cooked it for 1 hr covered with foil then last 1/2 hr took the foil off to brown the bread crumbs.

This is seriously 5 star low carb deliciousness!
when layering, after the carrots I added some wilted spinach, carmalised onions and oven roasted capsicum.
