Ingredients

- 1 onion (medium)
- 1 kg zucchini
- salt
- 2 Tbsp. olive oil
- 2 eggs
- 2 handfuls breadcrumbs

Directions
- Cut the onion into small pieces and sautee in oil. Meanwhile, wash the zucchini and cut into thin circles .
- Put the zucchini into the pan with the onion, add salt and cook (you can do this in a pressure cooker and it will take about three minutes, but using a normal skillet it will take about 15-20 minutes).
- Beat the eggs, add salt and pepper if you'd like. When the zucchini are ready add eggs and about 1 cup of breadcrumbs to zucchini/onion mixture.
- Mix well and place in a prepared baking dish. Cover the surface with a few more breadcrumbs to make it more crispy.
- Put it in the oven at 350F for 20 minutes. In the last five minutes turn on the broiler to make the surface more crispy.
