- 1/2 cup sugar
- 1/2 cup coconut sugar (brown sugar is okay)
- 1/3 cup canola oil
- 3 Tbsp. unsweetened applesauce
- 1 cup zucchini (grated, about 1.5 small zucchini, if using GF flour, use ¾ cup zucchini)
- 1 tsp. vanilla extract
- 1 tsp. white vinegar
- 3/8 cup water
- 2 cups powdered sugar
- 4 oz. Daiya (brand vegan cream cheese, softened)
- 4 Tbsp. buttery spread (softened)
- cinnamon sugar (on top)
