- 53 grams coconut flour
- 62 grams tapioca starch
- 54 grams gluten free oat flour (Bob’s Red Mill is certified gluten free)
- 4 grams psyllium husk (ground)
- 2 tsp. baking powder (aluminum free)
- 1 tsp. baking soda (aluminum free)
- 1 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1/2 cup coconut milk (not canned, or other non-dairy milk)
- 1 1/2 tsp. apple cider vinegar
- 3 oz. soy (6 tablespoons or 1 stick non-dairy butter, Earth Balance, free spread)
- 1 cup raw sugar (turbinado)
- 5 medium zucchini (ends trimmed)
- 4 Tbsp. applesauce (chunky, see note below)
- 1 cup walnuts (or non-dairy chocolate chips, enjoy life brand is also soy free)
