This was delicious! Made a few modifications: I didn’t have any milk to make the béchamel, so I just dotted bits of crème fraîche instead of the sauce layer, and also sprinkled a bit of the cheese mix as part of that layer. I used a mixture of sharp cheddar and Gouda instead of the gruyère, and made my own panko from a leftover section of miche bread (made the crumbs in the food processor and then baked them on a cookie sheet for about 15 minutes). Will definitely be making this again!
