- 2 Tbsp. olive oil (divided)
- 3 cloves garlic (minced)
- 1 onion (small, chopped finely)
- 1 1/2 cups zucchini (grated on the largest setting of a box grater, and squeezed dry using a paper towel or cheesecloth, make sure to remove all moisture from zucchini)
- 1/2 cup sunflower seeds (toasted)
- 3/4 tsp. sea salt (plus more to taste)
- black pepper (to taste)
- 1 1/2 cups chickpeas (canned)
- 1 cup cooked quinoa (1/3 cup dry)
- 3 Tbsp. water (optional)
- 2 Tbsp. Dijon mustard
- 1 Tbsp. lemon juice
- 2 Tbsp. fresh dill (chopped, use fresh basil if you prefer)
- 1/2 tsp. paprika (smoked and spicy)
- 4 Tbsp. Quinoa Flour (optional)
- 8 hamburger buns (or sliced bread, Udi's gluten free for gluten free version)
- red onion (thinly sliced)
- 1 handful arugula
- 4 Tbsp. wasabi mayo (omit for vegan version)
- 4 Tbsp. hummus (edamame)
- 3 cucumbers (small, thinly sliced)
