Description
This recipe is from my Momma. She was an awesome cook, known around our town as the best around... She always raised a garden, and made the greatest dishes! I was never one to eat zucchini,,but this recipe changed me over for sure. She and my Dad are both gone, both passing in their mid 60's...I lost them way too early! I am now 50,,people say I cook like her,,of course I don't think I do This for my Mom,,Sue.

- 1 zucchini
- 1 tomato (diced)
- 1 purple onion (small, ..diced)
- 1 cup bisquick

Directions
- Dice veggies, coat with bisquick, salt pepper , place in casserole dish
- pour over veggies oil, egg and oregano
- also add 1 cup of cheese in the veggie mixture. then cover the casserole with the remaining cheese. cover with foil bake 40 minutes,,then uncover and broil for 2 minutes
