Just made these today. I made a few changes to the recipe:
- substituted ginger powder with fresh grated ginger
- decreased sweetener to 1/4 cup honey/maple syrup combo
- made muffins
- reduced baking time to 40mins
First time making zucchini bread/muffins and was pleasantly surprised that they came out so delicious and moist.
Highly recommend. 😋
