First time making this recipe, it turned out quite well! I liked that there were no eggs and ingredients fairly simple and easy to adjust. I swapped out the whole wheat flour for all purpose gluten free flour, added 1 3/4 tsp of xanthum gum, and ran out of maple syrup, so I topped up the rest of the maple syrup with honey. Almost the perfect vegan loaf I will absolutely be adding this to my rotation of baked goods. Next test: how well does it freeze!
