- 160 grams Greek yoghurt
- 1 lemon zest (grated)
- 2 digestive biscuits
- 20 grams butter (melted)
- 2 tsp. lemon curd
- 1 tsp. caster sugar

Directions
- Place digestive biscuits in plastic food bag or bowl and crush using a rolling pin.
- Melt the butter in a jug for 30 seconds in the microwave (or in a saucepan).
- Once melted, pour the crushed biscuits in a mix well. Split the mixture into two ramekins and press firmly to create the base.
