Most mashed potato recipes make for a good side dish, but this Johnsonville creation takes center stage. Gravy has met its match when compared with delectable Johnsonville Sausage, fresh green and red peppers, onions, garlic and cilantro. This combination expertly adds wonderful flavors and textures that go well with your favorite mashed potatoes. Add in some chunky salsa, and you’ve got a hearty meal that’ll stop hunger in no time!

- 2 2/3 cups water
- 2/3 cup milk
- 1/4 cup butter
- 1 tsp. salt
- 2 2/3 cups Idaho Spuds Signature Potato Bits
- 13.5 oz. Johnsonville® Smoked Sausage (1 package, sliced)
- 1 Tbsp. olive oil
- 2 green peppers (diced)
- 2 red bell peppers (diced)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 16 oz. chunky salsa (1 jar)
- 1/2 cup fresh cilantro (chopped)

Directions
- In a saucepan, heat water, milk, butter and salt until boiling. Remove from heat. Stir in Potato Bits mashed potatoes until moistened. Let stand about 30 seconds or until liquid is absorbed; whip with a fork. Keep warm.
- Meanwhile in a skillet, brown sausage in oil for 3 to 4 minutes. Add peppers, onion, and garlic. Cook until vegetables are tender. Add salsa and continue to cook until heated through. Sprinkle with cilantro.
- Serve over potatoes
