- 2 cups heirloom tomato (chopped, seeded)
- 1 cup sweet onion (chopped)
- 1 orange bell pepper (or red, diced)
- 1 cup apricots (chopped dried unsweetened)
- 1 cup apple cider vinegar
- 1/3 cup coconut sugar (or vegan brown sugar)
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. smoked paprika
- 1/2 tsp. ground ginger
- 1/2 tsp. ground allspice
- 3 dashes cayenne pepper
- 2 Tbsp. fresh lemon juice
- salt (to taste)
- 1 1/2 cups chickpeas (cooked, or one 15-ounce can, rinsed and drained)
- 1 Tbsp. liquid aminos
- 15 oz. artichoke hearts (about 8 hearts, rinsed and drained.)
- 1 cup cooked brown rice
- 1/4 cup chickpea flour (plus 1 tablespoon)
- 1 Tbsp. spice blend (Za'atar)
- 1 tsp. smoked paprika
- 1/2 tsp. garlic powder
- salt
- pepper
- vegetable oil (for pan-frying)
- flatbread (or burger buns, use gluten-free if necessary)
- feta (tofu)
- herb dressing (tahini, possibly subbing fresh mint for some or all of the parsley)
- fresh mint (for garnish, optional)
