I found the croquettes to be very fragile and difficult to work with, and to help keep them intact I dipped them in the flour and let them sit for a few minutes before dipping them in the egg, and then coated them in the panko and let them sit for a few minutes more to let them set a bit before frying. All this aside, DELICIOUS :)
