- 2 oz. ham (Jinhua, or use other dry cured ham or prosciutto)
- 1 large shallot (thinly sliced)
- 10 cloves garlic (thinly sliced)
- 1 knob ginger (peeled and thinly sliced)
- 2 green onions (thinly sliced)
- 3 Thai chili peppers (thinly sliced, or use bird's eye peppers, or milder peppers to your taste)
- 1 1/4 cups vegetable oil (or other neutral oil)
- 1 Tbsp. brown sugar (or use white sugar)
- 2 Tbsp. oyster sauce
- 1 Tbsp. dark soy sauce
- 1/4 cup chicken stock
- 1 Tbsp. chili flakes (optional - or use a spicy chili powder)
- salt (to taste)
