Great, I had use older self rising cornmeal and the rising didn’t happen in my first batch. The second got the ingredients that it called for and WOW what a difference it made!!! Down home cornbread! I moved to NC 13 years ago and had to learn to cook like a Southerner. You see I moved from Vermont to NC and knew very little about cooking southern. It came quickly. My husband was the kind that thought he could eat no different! One day I asked him if he’d like me to fix some lasagna. Oh no I won’t eat that! Hmmm? I waited about a month or so and without saying what I was making I fixed some. I put the dish on the table. Sniffing said that smells good what is it as he was taking the first bite. Lasagna;husband said; wow that is good! Got cha!!!! He laughed! He likes all I cook him now!

I made this in a cast iron skillet, and it turned out great. It definitely needed more than 15 minutes for me, but it was still fast.

I have made this cornbread recipe a few times and it is delicious. It turns out golden brown on the bottom.

Great cornbread! Added a little cheese and sauteed some onions and jalepenos in the oil.
