- 1/2 cup potato starch (plus 1 tbsp extra)
- 1 knob ginger (peeled and thinly sliced)
- 8 cherry tomatoes (cut in half)
- 6 spring onions (cut into 4 cm batons)
- 80 mL Shaoxing wine
- 250 mL chicken stock
- 80 mL oyster sauce
- 1 1/2 Tbsp. mushroom soy sauce
- 2 Tbsp. sugar syrup (palm, or 1½ tbsp grated palm sugar)
- 30 mL cognac
- 1 handful spring onion (julienne, to serve)
