  • 2 tablespoons all purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 10 ounces colby cheese (coarsely grated, about 3 cups)
  • 6 ounces Fontina cheese (cut into 1/2" cubes, or use Limburger, aged brick, or Havarti)
  • 2 tablespoons spicy brown mustard (YUM!!)
  • 1/4 teaspoon cayenne pepper
