- 12 oz. brats (smoked, cut into 1/4" pieces, I used Johnsonville "smoked brats")
- freshly ground black pepper
- 2 Tbsp. all purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 10 oz. colby cheese (coarsely grated, about 3 cups)
- 6 oz. fontina cheese (cut into 1/2" cubes, or use Limburger, aged brick, or Havarti)
- 2 Tbsp. spicy brown mustard (YUM!!)
- 1/4 tsp. cayenne pepper
