- 3 cups onions (finely minced onion, about 2 large)

- 5 cloves garlic (minced)
- 2/3 cup butter
- 2/3 cup flour
- 3 cups pale ale beer
- 6 cups chicken broth
- 4 cups milk (or half 'n half)
- 2 Tbsp. Worcestershire sauce
- 3 Tbsp. Dijon mustard
- 2 tsp. ground mustard
- 1 Tbsp. Tabasco (or Tapatio sauce, I used 1/2 TBSP of each)
- 1/4 tsp. cayenne
- 10 cups cheese (shredded sharp)
- 1/2 cup grated Parmesan cheese
- salt
- pepper
