2 1/2 cups of chopped potatoes and 2 cans of garbanzo beans is too much. Halve each of these; otherwise make as written.
Husband's verdict. "Impossible to do justice by any picture or description. Tastes more fantastic than it looks."
If butternut squash is too expensive where you are, sweet potatoes -- the red-skinned, orange-fleshed type -- will work very well.
