Description
Nothing beats the cold weather or the flu like a big bowl of hot soup, at least for us.
This beautiful and so simple soup is made with all kinds of vegetables, you pick what do you like, I like all the vegetables, so I put a lot.
It’s very easy to make, you just chop some vegetables, sweat them, add water, season, boil and enjoy :).
Put as much or as little vegetables you want, and pick your favorites, what do you want in your soup, make it your way.
Ingredients

- 2 carrots
- 2 parsnips
- 5 green beans (broken into small pieces)
- 1 handful peas
- 1 onion
- 2 cloves garlic
- celery root (and stalk)
- 1/2 leek
- 1 potato
- 1/2 can corn
- 1/4 bell pepper
- salt

Directions
- I guess these are all the vegetables I put in the soup, and those simple seasonings. Start by chopping the vegetables and have them prepared. I had some of them in the freezer so I just throw them in the pot.
- Heat a teaspoon of olive oil in a pot. Add the onion and sweat it out. Add the garlic, season with salt and pepper and add the rest of the ingredients, along with the thyme, fresh or dry.
- Add as much water do you want and bring to a boil, and then turn down the heat to medium-low and let simmer nicely until all the vegetables are cooked through, and are nice and tender.
