- 1/3 cup extra-virgin olive oil
- 1 bunch kale (stems removed, leaves shredded or roughly chopped)
- 2 Honey crisp apples (or your favourite kind, thinly sliced)
- 4 oz. goat cheese (crumbled)
- 1/2 cup spiced pecans (see my instructions above in post for homemade)
