This year for Christmas, we decided to do a potluck where everyone in the family brought two dishes to share without telling the rest of the family what they were bringing. We decided on this approach so that one person wouldn’t have to do all the cookies and be stressed all day…
Since I’m the “healthy eater” in the family, I decided it would be safe to bring a salad. I’m a huge fan of salads and my husband’s favorite is the Cobb Salad. I decided to make a winterized version after being inspired by Laura Vitale. How does it always happen that I think of something and then two days later she has a recipe for it on her channel. Great minds must think alike.
Ingredients
- 3 heads romaine lettuce
- 1 apple (your choice)
- 1 pear
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 4 eggs (hard boiled)
- 4 strips bacon (crushed)
Directions
- First things first, cook your bacon using your preferred method. I like to use the microwave, because the bacon just turns out more crunchy. Hard boil your eggs, also using your preferred method.
- 2. Gather the rest of your ingredients. Chop your lettuce and wash it thoroughly. Allow to dry or pat dry with paper towels. Put all your lettuce in the bottom of the bowl.
- 3. Chop your apple and pear. Place on your salad nicely or scatter all around. Do the same with your cranberries and pecans. Once your eggs are done, peel and chop to desired size - place on salad. Chop up your bacon and do the same.
- 4. Pick your favorite salad dressing and you are ready to eat!
