- 1/2 pizza dough (recipe here or you can use store bought)
- flour (for dusting)
- 4 Tbsp. olive oil
- 4 sprigs fresh thyme (leaves picked)
- 2 tsp. salt
- 1 lb. idaho potatoes (peeled, sliced into 1/4 inch slices, and cooked, I used Russet Idaho Potatoes)
- 4 oz. mixed mushrooms (cleaned and sliced, I used a gourmet blend)
- 1 red onion (small, sliced)
- 2 cloves garlic (minced)
- salt
- freshly ground black pepper
- 1/2 cup idaho potatoes (mashed, recipe below)
- 1 lb. idaho potatoes (diced and cooked)
- 4 Tbsp. olive oil
- 1 1/2 cups bouillon (garlic, I used 2 teaspoons roasted garlic bouillon base mixed with 1 cup water)
- salt
- freshly ground pepper
