- 1 onion (medium)
- 2 cloves garlic
- 2 Tbsp. olive oil
- 400 grams tomatoes (passata worked best, but you could use tinned tomatoes)
- 1/2 cup water
- 1 tsp. sea salt
- 2 tsp. smoked paprika
- 1 tsp. oregano (dried)
- 1/2 tsp. cumin
- 1 Tbsp. brown sugar (you may need more if the tomatoes are particularly acidic)
- 1/2 tsp. cayenne (add more if you like it spicier)
- chipotle paste (add to particular taste)
- 6 tortillas (medium-sized, I used wholemeal)
- meat filling (I used leftover pulled pork)
- 150 grams corn (tinned, drained)
- kidney beans (optional)
- grated cheese (the amount to suit personal taste)
