The skin was crispy and the meat perfectly cooked. I will add additional seasonings to the olive oil the next time I make this recipe.

Very good! I added a little bit of salt over chicken & veggies. I added 5 medium red potatoes and baby carrots. I had to cook it for longer than 90 minutes. I ended up cooking it for 120 min. It was almost 6 lbs so maybe that's why.
