- 1 Tbsp. olive oil

- 2 zucchini (sliced)
- 1 red bell pepper (sliced)
- 1 bunch green onions (chopped, about 1.5 cups)
- 2 cups shredded cabbage
- 1 cup shredded carrots

- 1/2 cup coconut aminos
- 1/2 cup chicken stock
- 1 Tbsp. date paste (leave out for keto)
- 1 Tbsp. arrowroot starch
- 1 tsp. rice wine vinegar
- 1 tsp. sesame seed oil
- 2 ginger (” piece of, grated or finely minced, or sub ginger paste or ground ginger powder)
- 2 cloves garlic (grated or finely minced)
- 2 cups cashews (roasted or raw)
- 1 batch cauliflower rice
