- 4 Tbsp. olive oil
- 1 1/2 lb. chicken breasts (I butterflied two large chicken breasts and pounded them until they were of even thickness.)
- 1 egg (beaten)
- 2/3 cup blanched almond flour
- 3 Tbsp. coconut flour
- 1 tsp. garlic powder
- 1 tsp. lemon pepper seasoning (Trader Joe's, If you don't have this, just add 1/2 tsp of salt and a few shakes of pepper into the flour mixture)
- 1 Tbsp. ghee
- 2 lemons (1 for squeezing, one for slicing for garnish, optional)
- 1 cup chicken broth
- 1/4 cup capers
- 1 tsp. arrowroot powder (mixed with 1 tbsp water in a small bowl)
