I didn't have the lemon, but it turned out perfectly. I rubbed pink Himalayan salt and fresh pepper on firsts. Then I mixed a fish seasoning in the olive oil and brushed it on. I sliced the garlic and placed it in the cavity. It was delicious - fell off the bone.

This was a great recipe for my first time roasting a whole fish. This is also a good recipe for cooking all sorts of variations.

Awesome fish!
Great flavor. A traditional white with an ultra buttery accent. I stuffed mine with parsley, cilantro and jalapeños and coated with fresh lime just. It was excellent.
