- 3/4 cup zucchini (finely grated, 3/4 cup after squeezed dry and in a tight ball - from 1 medium zucchini)

I thought I had a zucchini and it turned out to be a cucumber, so I ended up making this bread with banana only and it turned out great! I added a little powdered ginger and the flavour was excellent. It will be even nicer with the zucchini, moister I expect. Will make again.
