- 2 cups whole wheat pasta
- 1/2 red bell pepper (chopped)
- 1/4 onion (cut into long strips)
- 2 tomatoes (minced)
- 1 Tbsp. capers (minced)
- 2 jalapeño chili peppers (minced)
- 1 cup panela cheese (cut into medium pieces, you can substitute it with goat cheese or feta cheese)
- 1 Tbsp. red wine vinegar
- 2 Tbsp. olive oil
- salt (as desired)
- pepper (as desired)
- 1 lemon

Directions
- Heat water in a cooking pot on high until it boils.
- Boil the pasta for 7 minutes and remove it from the pot. Strain and rinse with cold water.
- Add the red wine vinegar, salt, pepper, and lemon zest to a small bowl, and pour the olive oil in while mixing the ingredients.
- Add the red bell pepper, onion, tomatoes, capers, jalapeño peppers, panela cheese, and the pasta to a salad bowl.
- Add the dressing to the salad bowl, mix, and serve.
