- 1 cup unsweetened almond milk (or milk of choice plus 1 tablespoon vinegar, I used apple cider vinegar)
- 1/4 cup coconut oil (melted, or oil of choice)
- 1/4 cup maple syrup
- 1 tsp. pure vanilla extract
- 2 cups shredded zucchini (finely, from 2 small)
