    I used Redfish and used Cajun seasoning in the diagonal (and additional horizontal i chose) cuts and the cavity. I placed lemon slices then filled cuts with creamy butter just before the flip. Whole family enjoyed.

    Great.. I use striped bass. I used olive oil instead of vegetable oil
