- 1 cup whole wheat flour
- 1 cup white whole wheat flour (cups)
- 1/2 cup semolina flour (from 100% durum wheat)
- 2 tsp. kosher salt
- 1/2 cup buttermilk
- 1 Tbsp. extra virgin olive oil
- cornmeal (for dusting)
- 8 oz. pancetta (cut into 1/2-inch to 1/4-inch pieces)
- 2 shallots (large or 4 small, peeled, cut into 1/4-inch pieces)
- 2 bunches broccoli rabe (rapini, trimmed and cut into 1-inch pieces, stems included)
- 4 cloves garlic (peeled, halved and grated, any green centers discarded)
- 1 tsp. salt
- 2 tsp. aleppo pepper (see Recipe Notes or crushed red pepper flakes)
- 1/3 cup marinara sauce (good-quality jarred or homemade)
- 12 oz. scamorza (thinly sliced, or mozzarella cheese)
