  • 1 1/3 pounds sweet potatoes (peeled and cut into chunks)
  • 3 tablespoons butter (at room temperature)
  • 2 teaspoons seasoned salt
  • 1 clove garlic (crushed)
  • 1 tablespoon thyme (fresh chopped)

    Directions

    1. Cook russet potatoes in a large saucepan of boiling water for 10 mins. Add sweet potatoes; continue cooking for 10 mins until both potatoes are tender.
    2. Drain; mash. Fold in butter, seasoning, garlic and thyme. Season to taste. Serve with jerk chicken.
