- 2 Tbsp. tomato paste
- 1 1/2 cups Ecco Domani Pinot Grigio
- 1 cup chicken stock
- 4 Tbsp. salted butter (cold, cubed)

- parsnip
- 2 parsnips (large, peeled and chopped)
- 1 rutabaga (large, peeled and chopped)
- 1 garlic clove (lightly smashed)
- 2/3 cup heavy cream (warmed)
- 6 Tbsp. salted butter (softened)

- gremolata
- 2 Tbsp. parsley (minced)
- 1 1/2 Tbsp. lemon zest (shredded)
- 1 tsp. rosemary (minced)
- 1 garlic clove (minced)

Directions
- Preheat oven to 325°F.
- Pour 1 1/2 tablespoons oil into a large Dutch oven and place over medium-high heat.
- Generously season short ribs with salt and pepper and sear for 2 to 3 minutes on each side. Remove short ribs from pot and set aside.
