- 1 2/3 cups all purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. kosher salt
- 1/2 cup unsalted butter (1 stick // 4 ounces, at room temperature)
- 1 1/4 cups granulated sugar
- 1 large egg
- 3 large egg whites
- 3/4 cup whole milk
- 1 tsp. rose water (make sure you get the culinary kind!)
- 2 1/4 tsp. powdered gelatin (1 packet // 0.25 ounce)
- 1/4 cup cold water
- 12 oz. white chocolate (good quality, roughly chopped, I use Valrhona)
- 2 1/2 cups heavy cream (divided into 3/4 cup, 1 1/2 cup and 1/4 cup portions)
- food coloring (for your ombre!)
